The Sabbath — A roast crafted with reverence for rest, renewal, and the sacred rhythm of creation.

"The Sabbath" is a single origin, naturally decaffeinated Colombian coffee that uses Ethyl Acetate (EA), a naturally occurring ester found in bananas and, for this purpose, as a by-product of fermenting sugar cane. This process is exceptional for maintaining the integrity and sweetness of the green coffee even as the caffeine is removed (until only a maximum of .001%-.003% remains).

We are currently tasting notes of cherry, graham cracker, and honey. 

In the golden fields of ancient Scripture, a simple act unfolds with profound meaning: Jesus and His disciples walk through swaying wheat on the Sabbath day. Hungry from their journey, the disciples reach out and gently pluck heads of grain, rub them in their hands, and eat (Matthew 12:1–8; Mark 2:23–28; Luke 6:1–5). What the Pharisees condemned as work, Jesus declared an expression of mercy and life itself — reminding us that the Sabbath was made for man, not man for the Sabbath.

This is coffee for pausing. For remembering that true sustenance often comes in quiet, unhurried moments — a cup in hand, a breath taken, a heart stilled. Let The Sabbath be your gentle reminder: rest is holy, mercy matters, and even the smallest act of care can carry eternal weight.
